Resep Soto Padang

Richly flavored soup made of broth cooked in aromatic spices, served with crispy fried meat and crackers

Serve 5

Ingredients

½ kg tenderloin, sliced thinly following the grain

1 thumb-size ginger, crushed

1 thumb-size greater galangal, crushed

3 lemongrass, crushed

4 cardamom

1 thumb-size cinnamon

2 star annise

2 cloves

½ nutmeg, grated

5 bay leaves

Salt

Cooking oil

Spice Paste

13 shallots

10 cloves garlic

Pepper

Condiments

Sohun, cooked

Potato perkedel

Crackers

Fried shallots

Lime, sliced

Spring onion, sliced thinly

Step

1. Bring water to a boil. Add in meat with ginger, greater galangal, lemongrass, cardamom, cinnamon, star annise, cloves, grated nutmeg, and bay leaves. Add salt, boil over low heat until meat is tender. Remove meat, strain. Pound on meat until flattened. Set aside meat broth.

2. Heat oil in a frying pan, deep fry meat until golden brown and crispy. Remove from heat, strain and crush.

3. Sauté spice paste until fragrant. Remove from heat and add into meat broth. Bring to a boil slowly over low heat.

4. In a serving bowl, place vermicelli, potato perkedel, sprinkle with sliced crispy meat. Before serving, pour soto ensuring the spices do not get into the bowl. Sprinkle with fried shallots, spring onion, and a dash of lime juice. Lastly, add crackers on top.

½ kg daging sapi has dalam, potong tipis-tipis mengikuti serat

1 ruas jari jahe, keprek

1 ruas jari lengkuas, keprek

3 batang serai, keprek

4 kapulaga

1 ruas jari kayumanis

2 bunga lawang

2 cengkeh

½ biji pala, parut

5 lembar daun salam

Garam

Minyak

Bumbu Halus

13 butir bawang merah

10 siung bawang putih

Merica

Pelengkap

Sohun matang

Perkedel kentang

Kerupuk merah

Bawang goreng

Jeruk nipis, potong-potong

Daun bawang, rajang

Caranya

1. Jerang air hingga mendidih. Masukkan daging bersama jahe, lengkuas, serai, kapulaga, kayumanis, bunga lawang, cengkeh, biji pala, dan daun salam. Bubuhi garam, rebus sampai daging empuk. Angkat dan tiriskan. Tumbuk daging hingga tipis. Sisihkan kaldu.

2. Panaskan minyak, lalu goreng daging hingga kecokelatan dan renyah lalu angkat. Tiriskan, hancurkan dan sisihkan.

3. Tumis bumbu halus. Angkat. Masukkan ke kaldu, rebus di atas api kecil hingga mendidih dan aroma bumbu tercium.

4. Dalam mangkuk saji, tata sohun, perkedel, taburi suwiran daging goreng. Sebelum disajikan, siram dengan kuah soto tanpa bumbu-bumbu tadi. Taburi bawang goreng, daun bawang, dan beri perasan jeruk nipis. Terakhir, beri kerupuk di atasnya.
